Helenna always loved cakes. The traditional decorated cakes looked quite old-fashioned and unappealing, and in the UK the decorated (Royal Iced) cakes were always made by fruits. Until about 5 years ago when she saw photographs of cakes by Peggy Porschen she was inspired to take a 2-year part-time course in cake decorating and sugar flowers on Brooklands College.
In May 2012 launched the: ClearlyCake.
Even after a 2-year course, Helenna still loves taking cake courses and she has attended various ones like airbrushing cakes, painting cakes, sugar modelling skills, Lambeth piping and texturing techniques.
She loves conventional colour combinations like traditional colours for wedding cakes, such as white and pink. She also loves seeing unusual or little-used colour combinations like the latest wedding cake design she has finished (blue cake with orange roses and freesias).
Helenna ʼs next wedding cake designs will be of traditional colours. One white cake with pink roses and one with hand-piped lace techniques.
